It’s been a while since my last What I Eat In A Day post, huh?
A handful of you had mentioned that you liked these sort of posts, so I’m going to shoot to do them once a week or so! As for this one, Let’s rewind to yesterday, shall we?
Yesterday was a rare occasion where I ate every single meal at home. To most people that sounds crazy, but here in Manhattan dining out multiple times a day is the norm. Not to mention I’m always visiting restaurants for Hungry Blonde. A definite perk of the job 😉
I woke up around 6:30am to pound out some work first thing, along with a massive (un-pictured) mug of coffee with unsweetened almond milk. Nespresso is always my drug of choice. Then around 9am I had breakfast.
I’ve shared before how I “can’t live without” Free Bread, so I pretty much always have a loaf in the freezer. I made some easy toast topped with Justin’s peanut butter, unsweetened coconut, and hemp seeds.
After some more work and running out for a few meetings, I managed to fight the urge to stop at one of my favorite healthy spots and instead came home to make this Pinterest-inspired lunch.
I followed this recipe for Black Bean Butternut Squash Quesadillas but skipped the crema and used goat cheese instead of Monterey Jack. I also used Tumaros Skip The Sandwich tortillas, which are low carb and only 60-80 calories (depending on the variety). I LOVE these wraps and always have them on hand – they feel like I’m beating the system or something, ha.
Since I had lunch on the later side I wasn’t hungry before going to meet someone for happy hour, so I was starving by the time I got home around 9. Thankfully I had everything on hand to make this go-to meal: Roasted Salmon over Zucchini Noodles with Bolthouse Farms Cucumber Dill Greek Yogurt dressing. This pic is from a few weeks ago, but same idea (AKA way prettier than last night’s).
Oh and by the way – if you skip the dressing this is a great Whole30 approved meal!
For “dessert” I had a few pieces from the candy corn stash on our coffee table because we can’t let it go to waste, of course 😉
