Hi friends, happy MARCH! We’re officially on the other end of the winter hump *and* it’s my birthday month 🙂 I kicked off the first day of the month with a slow Sunday. I also managed to make/eat all of my meals at home, which is always a win, because a day without spending money on food is hard to come by these days.
As usual, I started my morning with a big cup of coffee – Nespresso, almond milk, a few drops of liquid stevia, cinnamon. This is an old pic, but it always looks the same 😉
For a late breakfast I had kind of a weird combo, but it worked. I made Ark Foods cauliflower with creamy buffalo sauce (it’s vegan/made with cashews – one of their new meals) and mixed in some cooked spinach + riced broccoli. Topped with a fried egg, feta cheese, a drizzle of cilantro lime sauce and everything-but-the-bagel seasoning.
And for a “breakfast dessert” (LOL) I had a spoonful+ of creamy peanut butter with mini chocolate chips.
Since I had a late breakfast I kind of just snacked my way through lunch with 2 bags of Bada Bean Snacks, about 3/4 of what was left of this frozen Hungryroot cookie dough, and a Suja Focus shot.
For dinner I made Banza chickpea pasta with my cauliflower cream sauce, but I added some Hungryroot Superfood Tomato Sauce to make it into this creamy pink sauce – it turned out SO good!
And for dessert, I had a bowl of So Delicious coconut whip with sprinkles + 2 SMPL peanut butter “chill” bites.
These are really, really good by the way.
