Ingredients

  • 2 pounds baby red or yellow potatoes, skin on, cut into quarters
  • 1/2 cup Hellmann’s Vegan mayonnaise spread
  • 1 tablespoon dijon mustard
  • 2 tablespoons red wine vinegar
  • juice of 1/2 a lemon
  • 2 garlic cloves, minced
  • 2 tablespoons shallot, minced
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons fresh chives, minced
  • 2 teaspoons fresh dill, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place potatoes in large pot and fill will water until potatoes are covered by 2 inches. Salt the water
  2. Bring to a boil, then turn heat down to medium-low and cook potatoes for 10-15, until fork tender*
  3. Drain potatoes and let cool for at least 20 minutes
  4. In a medium-sized bowl add all remaining ingredients and mix/whisk together until fully combined
  5. When potatoes are cooled, place in a large bowl and add dressing. Toss well, making sure all of the potatoes are coated
  6. Can be served immediately, but tastes best after a few hours of chilling
