Now, all of these are totally delicious, but they can be a bit heavy. Since it’s summer, we don’t want our food to weigh us down! We want it to be as light and refreshing as a dip in the pool. Well, this Herbed Vegan Potato Salad is just that. But just because it’s *healthier* doesn’t mean it’s not super flavorful. Trust me, this recipe is life-changing.
This recipe is the ideal one to whip up and take to a gathering. Even though it’s vegan, I can assure you that everyone will love it. In fact, no one will be able to tell this dish is plant-based! It’s creamy and tangy and oh-so-good.

Ingredients
- 2 pounds baby red or yellow potatoes, skin on, cut into quarters
- 1/2 cup Hellmann’s Vegan mayonnaise spread
- 1 tablespoon dijon mustard
- 2 tablespoons red wine vinegar
- juice of 1/2 a lemon
- 2 garlic cloves, minced
- 2 tablespoons shallot, minced
- 2 tablespoons fresh parsley, minced
- 2 tablespoons fresh chives, minced
- 2 teaspoons fresh dill, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Place potatoes in large pot and fill will water until potatoes are covered by 2 inches. Salt the water
- Bring to a boil, then turn heat down to medium-low and cook potatoes for 10-15, until fork tender*
- Drain potatoes and let cool for at least 20 minutes
- In a medium-sized bowl add all remaining ingredients and mix/whisk together until fully combined
- When potatoes are cooled, place in a large bowl and add dressing. Toss well, making sure all of the potatoes are coated
- Can be served immediately, but tastes best after a few hours of chilling

What’s the key ingredient in Vegan Potato Salad?
The key ingredient in any potato salad is, of course, the mayonnaise. Now, it’s no different from this recipe! The only difference is that you’re going to use Vegan mayo instead of regular. I am a *huge* fan of Hellmann’s Vegan mayo spread because it honestly tastes just like regular mayonnaise. Seriously, it’s magic. Their vegan spread is just as creamy, tangy and flavorful as the OG. If you blindfolded me and asked me which was which, then I’d fail. (And I *love* my mayo).
If you don’t want to make this vegan, then you don’t have to! Regular mayonnaise will work here, too. In addition, you can use any other mayo spread you love.

I love potato — like love, love. However, sometimes potato-based recipes can really lack in flavor. Not this one, though! What gives this recipe tons of flavor? The amazing herbs! The combination of parsley and dill makes my potato salad super light and refreshing, and gives it tons of dimension. Personally, I think dill is *the* flavor of the summer, and it really pairs perfectly with all those other summer sides you’ll be loading up on your plate.
