Easy Vegan Meatball Gnocchi Skillet

Ingredients
- 2–3 tablespoons olive oil
- 1 package Pure Farmland plant-based meatballs
- 3 cloves garlic, minced
- 1 12oz bag frozen cauliflower gnocchi, thawed to room temperature
- 3/4 cup marinara sauce
- 1/2 cup unsweetened, unflavored nondairy milk
- 1/2 cup shredded dairy-free mozzarella cheese
- salt and pepper to taste
- fresh basil or parsley for garnish
Instructions
- Preheat oven to 375 degrees
- Coat oven-safe (cast iron) pan with 1-2 tablespoons olive oil. Place frozen meatballs in pan and give a little toss so they get coated in oil
- Bake for 25 minutes, tossing midway
- Place cooked meatballs in a separate bowl, then heat the same pan to medium with another tablespoon of olive oil
- Cook the garlic for 2 minutes, then add the gnocchi. Season with salt and pepper
- Cook gnocchi for 5-6 minutes, tossing frequently, until slightly brown and crispy on the outside
- Add marinara sauce and milk, stir to combine, then add meatballs back to the pan
- Let simmer 3-4 minutes for sauce to thicken
- Sprinkle on cheese, turn off heat, and cover so the cheese melts
- Garnish with fresh basil or parsley

What meatballs should I use in this Easy Vegan Meatball Gnocchi Skillet?
In this case, I love using the Pure Farmland plant-based meatballs (and the cooking time is based on using those). Generally, I find they have great texture and flavor, as well as being gluten-free. However, you can use any other favorite meatless meatballs, or regular meatballs would work too if you’re not plant-based.
Moreover, I think this recipe would be delicious with sausage or even chicken.
What gnocchi should I use?
I love using Trader Joe’s or Hungryroot cauliflower gnocchi. In addition, you can also use regular potato gnocchi in this recipe. Either way I recommend cooking the gnocchi stovetop, as the crispy-on-the-outside texture is much better than boiling.
What dairy-free mozzarella should I use?
I used Violife Foods vegan mozzarella. Because sometimes vegan cheese can be a bit tricky to melt, I was pleasantly surprised to see how well this brand melted! However, if not vegan, you can use regular mozzarella cheese.
Do I have to use a pan/skillet?
If you don’t have an oven-safe pan or skillet, you can bake the meatballs as directed on a baking sheet, then finish the rest of the recipe in a pan.
