I’ve made various forms of dairy-free sauces (I’ll add links to all of them below), but I have to say this one is my favorite right now. Sweet potatoes are already so rich and creamy, and using one for this particular sauce made for quite the impressive vegan gnocchi mac and cheese. Here’s how to make it!
Vegan Gnocchi Mac and Cheese
Vegan, Gluten-free (yields 2 servings)
Ingredients:
- 1 package gluten-free gnocchi OR 1 box pasta of choice
- 1 medium sweet potato, cooked
- 2.5 tbsp Kite Hill plain dairy-free cream cheese
- 1 tsp nutritional yeast
- salt, pepper & garlic powder to taste
- 1/2 – 1 cup water (could also use unsweetened almond milk or vegetable stock)
- freshly cracked black pepper
- optional: mix in other vegetables, beans, protein, etc.
Directions:
- Cook gnocchi as directed
- Place remainder of ingredients in a blender or food processor
- Start by blending it all with 1/2 cup of water and add more as needed until reaches a smooth, creamy consistency
- Mix sauce into your gnocchi or pasta and top with some pepper
Next time I made this I think I’m going to kick it up a notch by doubling the recipe and finishing it off in the oven. But I couldn’t wait that long to share this with you!
You can really customize this however you like: use a different pasta, add in some vegetables or a protein source, etc.
