Trader Joe’s Spinach & Artichoke dip has my heart. Honestly, I could eat the entire container for a meal… it’s that good! However, I know that’s not *exactly* a balanced dinner, so I created this quick & easy weeknight dinner recipe.
What I love about Trader Joe’s is that their pre-made products are actually so good. Case in point: The Spinach & Artichoke Dip. But that’s not all! This recipe also uses their ready-to-serve chicken, which is one of the best protein hacks. It tastes amazing, and you don’t have to worry about cooking your own chicken! In this recipe, I combine four simple ingredients you can find at your local TJ’s to create one hearty and filling meal the whole family will love.
Ingredients & Instructions for Trader Joe’s Spinach Artichoke Dip Pasta with Chicken
What you’ll need:
🧀 1 container TJ’s frozen spinach & artichoke dip
🍗 1 package TJ’s ready-to-serve chicken (12 oz)
🍝 1 bag TJ’s brown rice pasta (16 oz)
🌿 2-3 cups organic baby spinach
🧂 salt & pepper to taste
Instructions:
1. In a large pot, boil pasta as directed in salted water for 7-10 minutes.
2. Roughly chop chicken into bite-sized pieces.
3. Place spinach & artichoke dip in a microwave safe bowl and microwave for 2 minutes, give a stir, then microwave for another 1-2 minutes.
4. Reserve 1/2 cup of pasta water, then drain cooked pasta and place back in pot.
5. To the pot with pasta add heated spinach & artichoke dip, chicken, pasta water, spinach, salt & pepper. Stir until fully combined the spinach wilts.
Now, this dish is both gluten-free and high in protein. It makes about four servings, so it’s perfect for a family dinner. However, this meal is great for just one or two people, too — the leftovers are incredible!
