Of course, we all know the holiday seasons. However, there is one important season we don’t celebrate nearly enough: Girl Scout Cookie Season. Yes, that time of year when the local Girl Scout troops camp out in front of local grocery stores and temp you with a variety of cookies. And because it’s a once-a-season kind of thing, you can’t help but buy multiple boxes of your favorite flavor. Now, are you a Samoa lover? Perhaps, a Tagalong is your jam? Or… maybe you love a good Thin Mint. If so, you’re going to love this Thin Mint Sugar Cookie bread. It’s the best twist on your favorite cookie.

This Girl Scout Cookie-inspired version brings together that magical flavor combo of mint + chocolate in my classic soft sugar cookie (cake) bread!

Ingredients
Bread Ingredients:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon peppermint extract
- 1/2 cup milk
- 1 1/3 cup 1:1 gluten-free flour *
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3 teaspoons green sprinkles
- 1/2 cup chocolate chips
Glaze Ingredients:
- 1/2 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoon milk
Instructions
- Preheat oven to 350 degrees
- In a large bowl mix together butter and sugar, then add in egg and peppermint extract. Lastly mix in milk until all wet ingredients fully combined
- In a separate bowl mix together flour, baking powder, baking soda and salt
- Add dry ingredients to wet ingredients and mix just until combined
- Fold in the chocolate chips and sprinkles. Don’t over-mix so the sprinkles don’t bleed
- Transfer batter to a parchment-lined + greased 8½x4½ inch loaf pan and bake for 45-50 minutes**, or until a toothpick comes out clean. Be sure not to over-bake!
- Let cool for 20 minutes in pan, then use a butter knife along edges to remove and transfer to a cooling rack. Let cool completely before topping with glaze
- To make the glaze, combine powdered sugar and cocoa powder well, then whisk in milk until a smooth consistency, adding more milk if needed
- Pour/spread glaze over the bread
Notes
* Be sure to use a 1:1 gluten-free flour in this recipe. I used this one from Pilsbury, which I found at my local grocery store and I loved how it worked in this recipe. My other favorite is by Bob’s Red Mill
If you are not gluten-free, simply use regular all-purpose flour, same measurements.
Store in an airtight container for up to 5 days

What flour should I use?
Be sure to use a 1:1 gluten-free flour in this recipe. In this case, I used this one from Pilsbury, which I found at my local grocery store and I loved how it worked in this recipe. However, if you can’t find that, my other favorites are Bob’s Red Mill and King Arthur.
In addition, please note that you can’t use just any gluten-free flour because some of them require different measurements, etc. so be sure to opt for one that clearly says it’s a 1:1 swap for regular flour.
Moreover, if you are not gluten-free, simply use regular all-purpose flour, same measurements.
Using all-purpose flour may cut down baking time. In that case, check it around 40 minutes, and it’s done baking when a toothpick comes out clean.
