When I first found I was pregnant nearly 7 months ago, I actually got excited for what my pregnancy cravings may be. I know that sounds silly but, I am a food blogger, after all 😉 I must admit I was a bit disappointed when the cravings never seemed to arrive!
But, a few weeks ago I got quite the hankering for a massive, stuffed breakfast burrito. The key is it HAD to include potatoes and refried beans. We’re talking a loaded breakfast burrito here, my friends. So I got my hands on all of the ingredients needed, and the result is a breakfast burrito you’re going to crave (pregnant or not) every single morning.

Ingredients
- 1 large (10-12 inch) flour tortilla
- 2–3 tablespoons shredded cheddar cheese
- 1/4 cup refried beans
- 1 egg, scrambled
- 1/4 cup fried or roasted potatoes
- 1–2 tablespoons salsa
- 1–2 tablespoons guacamole or avocado
Instructions
- Assemble all ingredients (in any order) down the center of tortilla, leaving at least 2 inches around entire tortilla
- Roll up tightly into a burrito, place in air fryer and spray top with some olive oil cooking spray
- Air fry at 450 degrees for 3-4 minutes, or until the cheese is melted

Ingredients and Substitutions for my Ultimate Air Fryer Breakfast Burrito
What tortilla should I use?
Any type of flour tortilla would work best. I don’t recommend using a gluten-free tortilla because they are not as bendable and the ingredients will likely fall out of the burrito (but of course you can try!).
I used this tortilla, which is high in fiber and low in carbs. I also love how large it is. It worked great for this recipe.
How should I cook the potatoes?
I’d recommend roasting or air frying the potatoes. I personally love air frying the potatoes. I slice 1 large russet potato into 1 inch pieces, spray with olive oil cooking spray, season with Primal Palate New Bae seasoning and airy fry for 20 minutes at 390 degrees (tossing midway). They lend to the perfect potatoes, crispy on the outside but soft on the inside.
You could also use sweet potatoes, but I definitely don’t recommend skipping on the potato portion as it really takes this burrito to the next level!
What guacamole should I use?
I’m pretty picky about guacamole, but I do love the Trader Joe’s chunky guacamole. You can use any other you like, make your own, or simply use ripe avocado.
What cheese should I use?
Cheddar or any sort of Mexican blend cheese would be delicious in this burrito.
What refried beans should I use?
Any you like! You could also use regular black beans or pinto beans. I used the refried black beans from Hungryroot, which are delicious. If you want to try Hungryroot, then you can use code HUNGRYBLONDE to get 30% off your first two boxes.
What air fryer should I use?
