Ingredients

Salad ingredients:

  • 12 ounces orzo pasta, cooked as directed
  • 2 cups shredded rotisserie chicken
  • 1 cup cucumber, diced
  • 1 cup grape tomatoes, halved
  • 1/2 cup red onion, diced
  • 3/4 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons fresh parsley, chopped

Vinaigrette ingredients:

  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup extra virgin olive oil

Instructions

  1. In a large bowl toss together all of the salad ingredients
  2. Add all vinaigrette ingredients to a bowl or mason jar, and whisk or shake until fully combined
  3. Pour vinaigrette over the salad and toss to make sure everything is coated evenly
  4. Refrigerate for at least an hour before serving. Keep stored in the refrigerator
