Sweet Potato Feta Chickpea Patties

A delicious homemade vegetarian patty that even meat-eaters will love! 

Ingredients

  • 1 15oz can chickpeas, drained and rinsed
  • 1 medium sweet potato, cooked and peeled
  • 2 cloves garlic, minced
  • 1/4 cup diced onion
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons gluten-free flour
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried parsley
  • 12 tbsp olive oil

Instructions

  1. Place chickpeas in a large bowl and mash with a potato masher or fork. Mash as well as possible, so it forms almost a paste
  2. Add sweet potato, garlic, onion, feta, flour and spices and combine
  3. Then add in the beaten egg. Once again you want to mash the mixture until it’s a paste-like consistency
  4. Form into 6-8 patties and flatten to about 1/2 inch thickness
  5. Heat oil in a nonstick pan to medium heat. Cook patties 3-4 minutes per side, until golden brown and crispy
