Oh, how I love a good veggie burger. However, I don’t make them from scratch nearly enough…heck, I may never have, which makes me all the more proud that this recipe turned out so delicious! These Sweet Potato Feta Chickpea Patties are going to be a crowdpleaser for both your vegetarian and meat-eater friends alike.

Ingredients
- 1 15oz can chickpeas, drained and rinsed
- 1 medium sweet potato, cooked and peeled
- 2 cloves garlic, minced
- 1/4 cup diced onion
- 1/2 cup crumbled feta cheese
- 3 tablespoons gluten-free flour
- 1 egg, beaten
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried parsley
- 1–2 tbsp olive oil
Instructions
- Place chickpeas in a large bowl and mash with a potato masher or fork. Mash as well as possible, so it forms almost a paste
- Add sweet potato, garlic, onion, feta, flour and spices and combine
- Then add in the beaten egg. Once again you want to mash the mixture until it’s a paste-like consistency
- Form into 6-8 patties and flatten to about 1/2 inch thickness
- Heat oil in a nonstick pan to medium heat. Cook patties 3-4 minutes per side, until golden brown and crispy

You can cook the sweet potato easily in just a few minutes by using this simple microwave method. Or save this recipe for when you have leftover cooked sweet potatoes!
To make these patties vegan:
Simply omit the feta cheese and use a “flax egg” instead of a regular egg. You could also try using a plant-based feta cheese. Violife has this Just Like Feta, however I have never tried it myself.
Other ingredient substitutions:
The gluten-free flour I use is Bob’s Red Mill 1:1 Gluten-Free Baking Flour. You could also use regular all-purpose flour (if not gluten-free), oat flour, or almond flour.
Instead of using chickpeas, white (cannellini) beans would work in this recipe.
Let me tell you about these patties. First of all, the addition of feta cheese is what really makes them. It adds so much great flavor and saltiness to compliment the sweet potato. And then the combo of sweet potato + chickpeas is so hearty and filling.
My favorite way to serve these Sweet Potato Feta Chickpea Patties is burger-style (no surprise there) on your favorite bread or bun with toppings like avocado, lettuce, and tomato. But you could also enjoy them atop a salad, as a wrap, with rice, etc.
