With the official start of summer coming in just a few weeks, I wanted to share a Summer Recipe Round Up with a handful of my favorites! All of these recipes are either gluten-free or can easily be made gluten-free. Plus, they are all quite easy to make, with most needing under 10 ingredients.
And just like that, SUMMER is around the corner! Now, I don’t know about you, but I’m getting so excited for trips to the beach, barbecues with friends, laying out by the pool, and soaking in all the R&R that summer has to offer.
Of course, you know I look forward to all of the delicious summer eats. Below are some of my favorite recipes that are perfect for the summer months. I have both sweet and savory options here. Plus, most of them are all gluten-free (or can easily be made gluten-free).

Grain-Free Frosted Sugar Cookies
These taste just like everyone’s favorite classic Lofthouse soft-baked cookies, but they’re made with healthier ingredients and are grain-free / gluten-free. If you use red, white & blue sprinkles, then you’ll have the perfect 4th of July dessert!
Cheesy Buffalo Chicken Dip
Now, this recipe is the ultimate crowd-pleaser. Seriously, everyone will LOVE it. It’s perfect to bring to a party, BBQ or game day as an appetizer to serve with chips or crackers. And if you’d prefer a vegetarian version, you can try my Cheesy White Bean Buffalo Dip.
Sweet Potato Feta Chickpea Patties
This is one of my favorite vegetarian recipes. Even my meat-eater dad loved them, so they’re a great option to bring to a gathering that vegetarians and non-vegetarians alike will enjoy. Plus, they’re hearty and so flavorful with the addition of feta cheese.
Healthy Cookie Dough Balls
On a hot summer day the last thing you want to do is turn on the oven, so these NO-BAKE Cookie Balls will be your new favorite treat. They’re so easy to make with just a few simple ingredients. What’s more, kids will love them too!
Chocolate Covered Coconut Bars (aka Copycat Mounds)
Sticking to the no-bake theme, these chocolate coconut bars are up there as one of my most popular recipes. My family even started calling them “Gracie bars.” Moreover, all you need is 4 ingredients to make them, and I’d consider making a double batch because these go fast.
Salted S’mores Cookies
Few things scream summer as much as that dreamy s’mores combo, and this recipe brings it all together in cookie form. Additionally, all it takes is a few easy swaps and they will be gluten-free.
Spiraled Carrot Salad with Avocado, Roasted Chickpeas & Peanut Dressing
If you get bored with regular salads, give this one a try. It’s light and refreshing yet incredibly flavorful.
Shrimp & Quinoa Salad
This is another light and refreshing summer salad that is anything but boring. It’s also a great side to bring to a barbeque or have as a light summer lunch by the pool.
Low Carb Peanut Butter Freezer Fudge Bars
Once again, no baking required for this delicious treat. Plus it’s chilled so a little bit of refreshment on a hot summer day. However, it will melt fast, so don’t leave it out for too long 😉
Vegan Butternut Squash Macaroni & Cheese
If you want a comforting classic side dish for your summer barbecue but want to keep it healthier, then this is the recipe for you. It’s creamy and delicious with a “cheese” sauce made out of butternut squash!
