Blondie ingredients:
- 1 box yellow cake mix *
- 1 tablespoon cinnamon
- 1/2 cup (1 stick) butter, melted
- 1 egg, beaten
Frosting ingredients:
- 3 3/4 cups powdered sugar
- 1/2 cup (1 stick) butter softened
- 1 teaspoon vanilla extract
Cinnamon sugar topping:
- 1/4 cup granulated white sugar
- 1 tablespoon cinnamon
Directions:
- Preheat oven to 350 degrees.
- Combine the cake mix and cinnamon in a large bowl, then mix in the melted butter and egg. (You could use canola oil like in my other CBB recipes, but I think the butter lends to more of that cookie flavor.) The batter will be very dense – almost more like cookie dough. That’s what you want!
- Place batter in a greased 8×8 pan or 8-inch cake pan. Bake for 25-30 minutes or just until the edges turn golden. Do NOT over-bake – it’s better to err on the side of under-baked (trust me).
- Let cool for 20 minutes before cutting because the gooey center needs to set.
- In a large bowl beat powdered sugar and softened butter using a mixer until it’s smooth, then mix in the vanilla extract.
- Top blondies with the frosting, then a sprinkle of the cinnamon sugar mixture.
* My favorite brand has always been Betty Crocker SuperMoist Yellow Cake Mix. It turns out to be the best texture and cake batter-y flavor!
If you want to skip the frosting, add the cinnamon sugar topping before baking. But I think the frosting works perfectly on these blondies – dare I say they’re almost cinnamon bun-esque? 😉
