Looking for a new weeknight dinner that the whole family will love? Enter: Slow Cooker French Onion Crack Chicken. I first made this dish a few weeks back and ever since it’s been *highly* requested in my household. It’s a creamy, cheesy chicken dish that hits the spot every time. Plus, you have to do little to actual cooking, and that’s the key to a weeknight dinner.
So, this is a slow cooker recipe, but if you don’t have a slow cooker you can still make this. I’m going to let you in on a little secret… you can use your oven! Set it 400 degrees for the first 20 minutes, then turn it down to 220 and cook low and slow for about 3-4 hours until the chicken is tender.

Ingredients
- 2 lb boneless skinless organic chicken thighs
- 1 oz packet of French onion dip mix
- 12 oz cream cheese
- 2 cups baby spinach
- 1 1/2 cups shredded sharp white cheddar cheese
- sliced green onion for topping
Instructions
- Place chicken thighs in slow cooker. Add French onion dip mix and toss it with the chicken
- Add cream cheese to slow cooker, then set on HIGH for 4 hours or LOW for 8 hours
- When done, use 2 forks to shred the chicken and combine all of the cream cheese/sauce it created
- Stir in the spinach and cheese, and heat for another 10 minutes until spinach is wilted and cheese melted
- Top with green onion and serve over rice

How should I eat Slow Cooker French Onion Crack Chicken?
Our favorite way is to eat it over rice. I have been loving cooking white rice or jasmine rice in chicken bone broth, it adds extra protein and delicious flavor! If you are going low-carb, then you could use cauliflower rice. I also imagine this chicken would go well with a regular or sweet potato.
Can I use chicken breast instead of chicken thighs?
Yes, chicken breasts work great in this recipe! However, chicken thighs do lend to a very tender, shreddable chicken, so I prefer using that.
What French onion mix should I use?
So, most grocery stores will carry a brand of French onion dip mix. However, if you want to opt for a healthier/organic option, then I’d recommend using Simply Organic or McCormick “Just 5.” Both of these are great options with a ton of flavor.

Hey Christy! I have not tried freezing this so I can’t say for sure. If so, I’d imagine sealing tightly in a large ziplock, or as individual servings, would be your best bet.
