Now, I first made this slow cooker chicken recipe a while back. I haven’t been able to stop thinking about it, so I knew I had to remind you all about how insanely good this Brown Sugar Garlic Chicken is. Without a doubt, this recipe will go straight on your dinner menu rotation for this year 📝
With just THREE ingredients needed, this recipe truly could not get any easier! Plus, all you have to do is throw it all in the crock pot, and you’re good to go. That’s my kind of meal.
In this case, I used coconut sugar in place of brown sugar for that ~lower glycemic index~ and it turned out incredible with the most delicious, sweet and garlicky flavor. If you’re worried about swapping in coconut sugar because you don’t want this to taste like coconut, then let me assure you: It doesn’t taste like coconut. Coconut sugar has a deep, rich brown sugar flavor. You can, of course, use regular brown sugar in this recipe, too.

Ingredients
- 6 boneless skinless chicken thighs
- 4 cloves of garlic, minced
- 1/3 cup + 1 tbsp coconut sugar (or brown sugar)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Place chicken thighs and garlic in Crockpot, then evenly sprinkle on salt, pepper and coconut sugar
2. Give a quick toss then cook for 4 hours on high or 8 hours on low
3. Use 2 forks to shred chicken
Notes
I don’t include salt & pepper as ingredients because they’re kitchen staples, hence referring to this as a “3 ingredient” recipe
When you first place everything in Crockpot you may think “this needs some liquid” – but trust me, it doesn’t! As everything cooks, it will release its own liquids to keep moist and tender

As everything cooks it will develop its own liquid that keeps the chicken nice and moist. There’s even enough sauce that you can pour it over the chicken when it’s done.
