No doubt, having a home-cooked meal at the end of the day is superior to throwing something in the microwave or spending an unnecessary amount of money on lackluster takeout. However, the hassle of cooking after spending an entire day at work can sometimes (or all the time!) feel like *way* too much work. All that said, there is a way that you can enjoy delicious home-cooked meals without having to toil away in the kitchen.
This collection of simple weeknight dinners will take the guesswork out of your meals. Here we have something for everyone! There are family-friendly weeknight dinners as well as diet-friendly dinners. In fact, most (if not all!) of these recipes can be tailored to fit specific diets. In addition, they are all protein rich, which means you’ll leave the table satisfied!
1: Spinach & Artichoke Chicken Skillet
If you are looking for the perfect weeknight dinner recipe for you and your family, then you have to try this Spinach & Artichoke Chicken Skillet Casserole. I promise you everyone will love it! So, you want a dinner that will satisfy you, but you don’t want to spend hours cooking something up in the kitchen… I mean who does?! This Plant-Based One Pot Taco Pasta will take the guess work out of dinner. Plus, it’s customizable, with the option to add a variety of toppings to make it your own! It’s zesty, hearty, and totally delicious. It also makes a great leftover meal!

This is the only recipe for classic, easy Slow Cooker Chili you’ll ever need! It’s perfect for making on a Sunday to last you all week long. When people hear “comfort food” they automatically think it’s filled with rich ingredients like butter or cheese, but the truth is you can make incredibly comforting meals using nourishing, healthy ingredients. The slow cooker is also your BFF when it comes to healthier comfort food because it brings out so much flavor. Case in point: Slow Cooker White Bean Chicken Chili. This recipe is packed with nutrients and protein, so it leaves you satisfied long after you’ve finished dinner.

Now, this is a weeknight dinner that the entire family will love! I actually can’t believe how delicious these Paleo Chicken Nuggets turned out! They’re grain-free, gluten-free, Whole30 approved and Keto-friendly. And, dare I say they taste ridiculously close everyone’s favorite Chick-Fil-A nuggets.
9: Sausage Sweet Potato & Kale Soup
This recipe for Sausage Sweet Potato & Kale Soup was inspired by my best friend, who, one cozy winter, night made the best soup I have ever had. After that, I knew I had to try my hand at creating my own! This soup is so warming and nourishing. Here I use sausage as the protein, but pork would work great too. If you’re vegetarian, then this would be amazing with beans!
10: One Pot French Onion Pasta
It was about time I made a pasta-version of my favorite soup (French Onion, of course!). One Pot French Onion Pasta is comfort food at its finest — and easiest. Believe it or not this dish takes less than one hour to make, but you’d never know from how much flavor is packed in. It can also be made gluten-free!
