NACHOS are one of those dishes that stand the test of time. There’s no wrong season, occasion, or even time of day to enjoy the crunch of chips paired with melty cheese and allllll the toppings. Am I right?
(Hint: I’m right.)
I love a good classic version of nachos, but the other day I was feeling a bit more creative and made these Shrimp & Chorizo Nachos, using some great summer-focused ingredients from my favorite new addition to NYC, the Whole Foods Market 365.
Let’s just say that the moment I walked into the Whole Foods Market 365 in Fort Greene Brooklyn, I knew it was going to be a struggle to leave. The store is so wonderfully curated – it made shopping for the healthy ingredients I was looking for so simple. And of course I love that there is a lower price point while still maintaining the same standards and quality as Whole Foods Market.
Whole Foods Market 365 also brought in outside restaurants like Next Level Burger and Juice Press, which makes the experience of grocery shopping even more enjoyable (because let’s be real, who doesn’t get hungry and need a quick bite while grocery shopping?).
After giving myself a quick tour of the Whole Foods Market 365 store, I started to grab the ingredients for the nachos. I liked knowing that the 365 line of products were all fresh & wholesome without any artificial preservatives, colors, flavors, sweeteners, and hydrogenated fats. Less guesswork = more convenience.
Once I got home, I was all sorts of ready to get my nacho on. Here’s how to make ’em!
Shrimp & Chorizo Nachos
Ingredients:
- 3/4 bag Late July chips (I used the Chia & Quinoa variety)
- 8oz (about 2.5 links) Mexican pork chorizo
- 3/4 lb 365 raw farmed shrimp, peeled & deveined then chopped
- 1 tbsp canola oil
- 4 oz shredded 365 pepper jack cheese
- 4 oz shredded 365 cheddar cheese
- 1 green onion, chopped
- 1/2 cup organic 365 sweet corn
- 1/2 cup 365 spicy guacamole
- 1/2 cup 365 spicy pico de gallo
- 1/4 cup 365 organic sour cream
- fresh squeeze of lime
Directions:
- Preheat oven to 400 degrees, line a baking sheet with foil and spray with nonstick spray. Set aside.
- Heat a large, oven-safe skillet over medium-high heat with canola oil. Add sliced chorizo then cook through for 5-6 minutes, and then scoop onto a paper towel-lined plate to drain, reserving fat in the skillet.
- Add chopped shrimp to the same skillet and sauté until just cooked through, 3-4 minutes. Remove to plate with chorizo.
- Make layers on the baking sheet using 1/2 of the chips, 1/2 of the chorizo/shrimp mixture, 1/2 of the corn, 1/2 of the cheese, then repeat.
- Bake for 6-7 minutes, or until the cheese is completely melted.
- Top with guacamole, pico de gallo, sour cream and squeeze of fresh lime.
Fresh out of the oven…
…then topped to perfection. *Insert heart eyes emoji*
