This semi-homemade Coconut Cream Pie is made with just 6 ingredients, and other than the crust there’s no baking required! Scroll down for the recipe.
Despite the influx of cookies, blondies and other cake-like desserts you see here in HB, you might be surprised to learn that one of my favorite desserts is cream pies. Yes…cream pies. Is my inner 80-year-old woman showing?
So, the other day I got a mega craving for one and realized that I’ve actually never made a cream pie myself. If this whole home-quarantine has taught me anything, then it’s that I should take my Coconut Cream Pie craving into my own hands. So that’s exactly what I did. And guess what? It couldn’t have been more easy.
Semi-Homemade Coconut Cream Pie
Ingredients:
- 1 9-inch frozen pie crust
- 2 boxes (3.4oz) instant vanilla pudding mix
- 1 can (14oz) sweetened condensed milk
- 3/4 cup cold milk
- 1 3/4 cups shredded coconut
- 1 container + 1 cup whipped topping, thawed to room temperature
- 1 tsp coconut extract (optional)
Directions:
- Bake pie shell as directed and then set aside to cool for at least 15 minutes.
- In a large bowl, whisk together condensed milk, milk, pudding mix and 1 1/2 cups of the coconut. Then fold in 1 container of whipped topping
- Pour filling into pie crust. It will be very full! But trust me, it all fits 😉
- Refrigerate to let it set for 2 hours
- Place remaining coconut in a nonstick pan and cook over low-medium heat, stirring frequently, until the flakes are mostly golden brown
- When the pie has been refrigerated for 2+ hours, top with remaining whipped topping and toasted coconut. Store in the refrigerator
So, if you couldn’t tell, this pie is all sorts of decadent. It’s packed with creamy coconut goodness, paired with the flakey pie crust, this definitely wouldn’t fit in the “light dessert” category. But sometimes you just have to go for it, you know??
