Sausage Sweet Potato & Kale Soup

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 2 shallots, sliced
  • 1 large sweet potato, peeled & diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb ground mild Italian sausage
  • 16oz beef bone broth
  • 32oz vegetable stock
  • 2 bay leaves
  • 2 cups baby kale
  • grated parmesan for topping

Instructions

  1. In large pot add olive oil and cook garlic, onion and shallot on medium low heat for 7-8 minutes until softened & translucent
  2. Add sweet potato, salt and pepper. Cook for another 5 minutes
  3. While sweet potatoes cook, in separate skillet or pan cook sausage broken into small pieces
  4. Add sausage to pot, then broth, stock and bay leaves. Bring to a boil then turn heat to low and cook on simmer for 15 minutes
  5. Add baby kale in for last 2 minutes until wilted. Remove bay leaves
  6. Serve topped with freshly grated parmesan cheese and crusty bread
