Pumpkin Pie Baked Oats ~ like a mini pumpkin cake meets oatmeal! Easy blender recipe that is delicious for a fall-themed breakfast.

Ingredients

Scale
  • 1/2 cup (regular or quick) oats
  • 1/4 cup pumpkin puree
  • 1 egg
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/4 cup milk
  • 2 tablespoons dark chocolate chips (optional)
  • any toppings you’d like – I like chocolate chips, granola, nuts, nut butter

Instructions

  1. Preheat oven to 350 degrees
  2. Put all ingredients (except chocolate chips) into a blender and blend until smooth consistency
  3. Pour into a greased oven-safe bowl. Fold in chocolate chips
  4. Bake for 25 minutes
  5. Add any toppings you’d like, and enjoy!
