The baked oats trend was one of my favorite from the last year, so you know I had to make a hearty, warm pumpkin version of them as we approach (everyone’s favorite) fall season. What I love about baked oats is not only how easy they are to make, but also how much versatility there is. You can virtually make them into *any* flavor you want! However, I think that pumpkin might be the best baked oats flavor out there. The warming spices lend so nicely to this fresh out of the oven breakfast. Truly, it doesn’t get any easier than this, or more decadent. And who doesn’t love a decadent breakfast?! It’s the best way to start your day.
If you haven’t tried baked oats yet, you are in for quite the treat. It is such a satisfying twist on oatmeal! While it does take a bit longer, it’s entirely worth the wait. Plus, it’s quite easy because all you have to do is toss all of the ingredients into a blender and bake it up. We love the simplicity! The result is like a mini pumpkin cake meets creamy oatmeal. Le swoon. You’re going to be making this recipe on repeat.

Ingredients
- 1/2 cup (regular or quick) oats
- 1/4 cup pumpkin puree
- 1 egg
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/2 tsp baking powder
- pinch of salt
- 1/4 cup milk
- 2 tablespoons dark chocolate chips (optional)
- any toppings you’d like – I like chocolate chips, granola, nuts, nut butter
Instructions
- Preheat oven to 350 degrees
- Put all ingredients (except chocolate chips) into a blender and blend until smooth consistency
- Pour into a greased oven-safe bowl. Fold in chocolate chips
- Bake for 25 minutes
- Add any toppings you’d like, and enjoy!
