This recipe for Pulled Pork Sweet Potato Nachos is hearty, nourishing, and so delicious! It’s made with better-for-you ingredients like sweet potatoes, fresh vegetable toppings, dairy-free queso sauce, and juicy + flavorful (fully cooked!) Kurobuta Pulled Pork. Paleo and Whole30 approved.

Ingredients

  • 2 medium sweet potatoes, sliced thinly
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 package True Story Foods Korubuta Pulled Pork
  • 1/2 cup tomato, diced
  • 1/4 cup red onion, diced
  • 1 ripe avocado, diced
  • 1/2 of a jalepeno, sliced and de-seeded
  • 1/4 cup cashew queso sauce *
  • chopped fresh cilantro for garnish

Instructions

  1. Preheat oven to 400 degrees
  2. In a large bowl toss sweet potato slices with olive oil and spices. Spread evenly on a large baking pan
  3. Bake sweet potatoes for 25 minutes, flipping midway
  4. Remove True Story Foods pulled pork from package, place in a stovetop pan on medium heat until heated through
  5. When the sweet potatoes are done baking, it’s time to assemble! Place them on a large dish then top with pulled pork, tomato, onion, avocado, jalepeno, a drizzle of queso and cilantro
