There’s just something about nachos that make them one of the most fun and satisfying meals. Maybe it’s the toppings, or maybe it’s eating them with your hands, but in the case of these Sweet Potato Pulled Pork Nachos it is all about the flavor.
If I’m being honest, cooking meat isn’t exactly my favorite, and making juicy + flavorful pulled pork from scratch is definitely a labor of love. Ingredients
- 2 medium sweet potatoes, sliced thinly
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 package True Story Foods Korubuta Pulled Pork
- 1/2 cup tomato, diced
- 1/4 cup red onion, diced
- 1 ripe avocado, diced
- 1/2 of a jalepeno, sliced and de-seeded
- 1/4 cup cashew queso sauce *
- chopped fresh cilantro for garnish
Instructions
- Preheat oven to 400 degrees
- In a large bowl toss sweet potato slices with olive oil and spices. Spread evenly on a large baking pan
- Bake sweet potatoes for 25 minutes, flipping midway
- Remove True Story Foods pulled pork from package, place in a stovetop pan on medium heat until heated through
- When the sweet potatoes are done baking, it’s time to assemble! Place them on a large dish then top with pulled pork, tomato, onion, avocado, jalepeno, a drizzle of queso and cilantro

Where do I find or make cashew queso sauce?
I’ve found a handful of dairy-free, cashew based queso dips/sauces at my local grocery stores and Whole Foods. You could also make your own using this easy recipe.
Can I use regular potatoes instead?
Yes, this recipe would be delicious and still Whole30 approved using white potatoes!
