How to Make the Perfect Soft Scrambled Eggs
1. Scramble 2-3 eggs well. You can add 1-2 tablespoons of milk or cream to make them extra fluffy, and salt if you’d like *
2. You should use a high quality nonstick pan, and I highly recommend the Great Jones Small Fry. It’s the perfect size for 2-3 eggs and has a nontoxic ceramic coating, and you can shop it directly from this post below!
3. Turn heat to low and melt at least 1/2 tablespoon butter for extra nonstick-age so the eggs scramble as easily as possible
4. Use a flexible silicone spatula, so you can really get in there (without scratching the pan)
5. Most importantly: LOW HEAT and SCRAMBLE ENTIRE TIME!
Don’t get impatient, hunni 😉 I usually scramble pushing from the outside of the pan and toward the center
6. Turn off heat and remove eggs from pan *just* before they look fully cooked. They’ll still be a tiny bit gooey but will continue cooking slightly. You want them to be super soft and fluffy!
* There’s a debate as to whether it’s better to salt eggs before or after cooking, but I prefer to salt them after
This is the Great Jones Small Fry Pan, and it has become the staple pan in my kitchen.
The details: this 8.5-inch nonstick frying pan is made with a nontoxic ceramic coating so that’s healthier for both you and planet Earth. Small Fry will be your go-to pan for eggs, and the welded handle (no screws or rivets!) means food will never get stuck. Free of PTFE and PFOA chemicals.
