Now, I’ve never believed that ice cream is a summer-only dessert, and this dessert will prove anyone who does wrong. Trust me when I say that Peppermint Brownie Ice Cream Cake is a real crowd-pleaser! Plus, everyone will be impressed, but no one will know how simple it was to make (;
So, you know those chocolate peppermint candies you sometimes receive after meals? Well, this ice cream cake is kind of like a whole lot better version of those. The chocolate layer is rich and decadent, while the peppermint ice cream and whipped topping are both bright and light. No doubt, this is the ideal after-dinner treat.
PrintPeppermint Brownie Ice Cream Cake
This Peppermint Brownie Ice Cream Cake is an easy homemade ice cream cake with a brownie base, peppermint ice cream and whipped topping that everyone will love!
Ingredients
- 1 (18.3 oz) box brownie mix
- egg(s), water, oil as called for on brownie mix *
- 2 pints mint chocolate chip ice cream, softened
- 1 tub whipped topping, thawed
- 5 chocolate cream-filled cookies, crushed
Instructions
- Prepare brownies as directed in a parchment-lined & greased 8×8 baking dish, and allow to cool completely (about 1 hour)
- Spread the softened Peppermint Partie ice cream evenly across the top of the brownies, followed by a layer of whipped topping, then crushed cookies
- Immediately place in freezer to allow everything to set for at least 2 hours (overnight is best)
- Allow to thaw slightly before cutting into bars/slices serve, and keep stored in the freezer

* the brownie mix you choose to use will have additional ingredients and instructions to follow. Choose the baking time & temperature option for 8×8 baking dish (if 9×13 you will need more ice cream)

What brownie mix should I use?
Any brownie mix you’d like! You can opt for a classic like Betty Crocker Brownie Mix, a gluten-free brownie mix, or an almond flour-based brownie mix like from Simple Mills.
Can I use homemade brownies?
Yes! In fact, my recipe for the Best Grain-Free Brownies would be delicious with these bars.
What whipping topping should I use?
In this case, any you like. I typically use TruWhip or dairy-free CocoWhip as they have less funky ingredients.
What ice cream should I use?
I used Enlightened Peppermint Partie in this recipe, and it turned out incredible. What cookies should I use?
I used good old fashioned OREO cookies, but these chocolate wafer cookies would work as well.
Pro tip: I put the cookies in the food processor to make a quick and easy crumble.
