That’s why I’m all about creating this easy, low ingredient recipes that still pack all the flavor of more complicated dishes. If you follow me on Instagram, then you know I can’t get enough of crispy stovetop gnocchi. In my opinion, it’s the cooking method to get the most ideal gnocchi texture, and in this recipe it pairs so well with juicy tomatoes, mozzarella cheese, and the burst of flavor from fresh basil.
So, here’s how to make it!

One pan, 5 ingredients! This Caprese Gnocchi is a delicious and easy weeknight meal that you can make in under 30 minutes.

Ingredients
- 2 tablespoons olive oil
- 1 pint grape tomatoes
- 12oz uncooked gnocchi (thawed if frozen)
- 4oz mozzarella cheese, cut into 1/4 inch-thick slices
- 5–7 leaves of fresh basil
- salt & pepper to taste
- drizzle of balsamic glaze (optional)
Instructions
- Add 1 tablespoon olive oil to a large pan and turn heat to medium
- Add tomatoes, season with salt and pepper, and cook for 5 minutes
- Add gnocchi to pan, another drizzle of olive oil, and season again with salt and pepper
- Cook for 10-15 minutes, stirring frequently, until the tomatoes are blistered and gnocchi is slightly browned & crispy
- Turn heat to low and top with mozzarella cheese slices. Cover until the cheese melts
- Turn off heat and top with fresh basil leaves, balsamic glaze and freshly cracked black pepper

I cannot wait for you to make this One Pot Caprese Gnocchi! It’s such an easy weeknight meal that you can throw together quickly, but will be a total crowd-pleasing, comfort food meal. This recipe yields 2-4 servings, but it can easily be doubled or even tripled if you want leftovers. Hint: you will 😉
What gnocchi should I use?

Otherwise, any gnocchi will work. If you’re using frozen gnocchi, just be sure to thaw first.
Other variation ideas:
- Add in fresh baby spinach toward the end, just until it wilts, for some added nutritional value
- Add your favorite meatballs or Italian sausage for a bump in protein
- Finish with a drizzle of balsamic glaze
