My Easy No-Bake Pumpkin Spice Cookie Dough Balls are beyond easy to make… and SO good. It’s hard to believe these little bites are gluten-free, grain-free, plant-based, low in sugar, only 7 ingredients. Plus, you only need one bowl to make them. Trust me, this recipe will be on repeat.

Ingredients
- 2/3 cup creamy cashew butter
- 1/4 cup pumpkin puree
- 1/4 cup + 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 cup + 2 tablespoons coconut flour
- 1/2 cup low sugar white chocolate chips
Instructions
- In a large bowl whisk together cashew butter, pumpkin puree, maple syrup, cinnamon and pumpkin pie spice
- Mix in coconut flour until fully combined, then mix in white chocolate chips
- Roll dough into 16 balls and refrigerate on a parchment-lined dish or pan for at least 30 minutes before serving
- Keep stored in the refrigerator

Ingredients and Substitutions for No-Bake Pumpkin Spice Cookie Dough Balls
Can I use a different type of flour?
I recommend using the coconut flour as instructed in the recipe as it lends to the most dough-like consistency. My favorite brand of coconut flour is Bob’s Red Mill. In addition, almond flour works as well though it might not hold up as well as the coconut flour does.
I would not recommend using all-purpose flour as you are not supposed to consume that raw.
Can I use a different sweetener?
If you want to substitute maple syrup, then honey is a great sweetener to use in this recipe (same measurements).
Can I use a different nut butter?
Yes, any nut butter works! In fact, both peanut butter and almond butter would be delicious, and you can use sunflower seed butter as a nut-free option.
What white chocolate chips should I use?
I like using Bake Believe white chocolate chips, as they are a delicious and low sugar option. You could also use regular white chocolate chips.
Regular chocolate or dark chocolate chips would be delicious in these cookie dough balls as well. Some of my favorites to use are Bake Believe, Lily’s, and Enjoy Life.

Honestly, it’s hard not to eat half the batch in one sitting… so it’s a good thing that this recipe is easy to double or triple. It’s perfect to bring to a gathering!
In addition, these cookie dough balls freeze very well. So definitely make extra to have on hand as a quick sweet treat!
