It’s almost that time of the year where it’s too hot to turn the oven on. The mere thought of doing so has you breaking out in a sweat (literally!). But what happens when you’re desperate for a good cookie?! The moment that craving hits, reach for this No-Bake Granola Monster Cookies recipe. These cookies are fully loaded with decadent ingredients. While you might not have to bake them, they still have a hearty flavor and cookie texture thanks to the melted butter and oats. Plus, since they have oats and granola in them, you can totally have them for breakfast… right?! Right.
One thing about me: I love a cookie with some personality. Now don’t get me wrong, traditional chocolate chip is always a winner, but there’s something so satisfying about a cookie with a lot of texture and a few different flavors. Bonus points if those flavors are chocolate and peanut butter (; So if you’re anything like me, this is a no-bake cookie recipe for you.

Ingredients
- 1/4 cup unsalted butter (1/2 stick)
- 1 cup granulated sugar
- 1/4 cup milk
- 1/2 cup creamy peanut butter
- 1/2 teaspoon vanilla extract
- 1 + 1/2 cups granola, slightly crushed
- 1 cup quick oats
- 1/3 cup chocolate chips
- 1/3 white chocolate chips
- 1/3 M&M candies
Instructions
- To a large sauce pan or pot melt butter over medium heat
- When the butter is melted stir in sugar and milk and combine well
- Stir frequently and bring mixture to a boil. Allow to boil for 30 seconds while continuing stirring
- Remove from heat and stir in peanut butter and vanilla, then stir in granola and oats and combine well
- Allow to cool for 5 minutes (so the chocolate chips don’t completely melt, they will partially but that’s ok!), then mix in chocolate chips, white chocolate chips and M&Ms
- Form into 15-20 cookies and place on parchment-lined baking sheets
- Refrigerate for at least 30 minutes before enjoying. Keep stored in the refrigerator

Can I make these No-Bake Granola Monster Cookies gluten-free?
In fact, you can! If you want to make these cookies gluten-free, then sub in your favorite certified GF oats and granola. I like to use Quaker Oats. Note that most granolas are already gluten-free – score.
Can I make this recipe dairy-free?
So, I have not tried this recipe using dairy-free products. However, if you want to try this recipe dairy-free, then you can use your favorite plant-based milk and butter. It will be essential that whatever plant-based butter you use melts similar to a traditional butter. In addition, you’ll want to substitute dairy-free chocolate in for both white and dark chocolate chips and remove the M&M’s.
What kind of granola should I use?
In truth, you can use any kind of granola you want. I chose a plain granola for this recipe, and my favorite brand is Purely Elizabeth. The granola is mostly there to give the cookie a bit more body and crunch. However, you can give these cookies another element of flavor by choosing a granola that has its own pizzazz. I think a peanut butter or chocolate flavor granola would work fantastic here!
