If you’ve made my Original Cake Batter Fudge or Red Velvet Cake Batter Fudge, you know it’s basically a dream come true – minimal ingredients, no baking required, and everyone is going to freak over how good it is.
You also might know that I have a Mint Chocolate Chip version of my (baked) cake batter blondies! So I’m here to bring you the best of those worlds combined…conveniently right before Christmas 😉
Mint Chocolate Chip Cake Batter Fudge
Yields 30-40 pieces. Store in the refrigerator for up to 5 days.
Ingredients:
- 1 box Betty Crocker Super Moist Yellow Cake Mix*
- 1 can (14oz) sweetened condensed milk
- 4 tbsp unsalted butter, melted
- 1 tsp mint extract
- 1-2 tsp green food coloring (optional)
- 3/4 cup chocolate chips
Directions:
- In a large mixing bowl, combine the cake mix, condensed milk, mint extract and butter. If it needs to be thinned out add a tiny bit of milk at a time.
- Add the green food coloring and combine well, then fold in the chocolate chips.
- Transfer to a foil-lined 8×8 pan and press down to flatten top.
- Refrigerate for at least an hour before cutting into small square pieces.
* You can try using another brand, but I always like the texture of Betty Crocker most. Also, I wouldn’t really suggest a gluten-free mix as it can be too grainy.
