Some of my favorite unique recipe creations come at the strangest times. This morning, for example – I’m fresh back home from a week away, have a full day of work ahead of me, and after my morning coffee thought “you know what I should do right now? Make brownies.” At first I thought it was a fail because I didn’t make enough batter, but instead I looked at the upside and realized I made this fun Mini Collagen Brownie Cake instead.
Mini Collagen Brownie Cake
yields 4 servings ~ can easily double!
Ingredients:
- 1/2 cup almond flour
- 3 tbsp cacao powder
- 2 scoops Further Food Chocolate Collagen Peptides Protein Powder
- 1/3 cup coconut palm sugar
- 1/4 tsp pink Himalayan sea salt
- 1 egg, beaten
- 3 tbsp butter OR coconut oil, melted
Directions:
- Preheat oven to 350 degrees and line a 6-7 inch cake pan with parchment paper
- In a large bowl combine almond flour, cacao powder, collagen powder, coconut sugar and salt
- Mix in the beaten egg and melted butter until batter is combined
- Bake for 13-15 minutes. Let sit for 10 minutes before cutting
These brownies are dense and rich enough to each on their own, but I loved adding some toppings to make it more like a cake. I added a few spoonfuls of creamy peanut butter then spread on some full fat Greek yogurt, and a sprinkle of cacao nibs.
