It’s here, people. Tomorrow is the first official day of summer, which means it’s also the first official day of grilling season. *Does happy dance.*
There’s nothing like a good barbeque, and not just because of the food (we’ll get to that in a bit). Grilling season is all about embracing the longer days of summer and enjoying time with family & friends.
And yes, of course a great meal never hurts. This year I’m going to bring a little something new to my family’s barbeque, and I can’t wait to see how they like it. This Grilled Sausage & Vegetable Rigatoni is actually made with VEGAN sausage, and I’m telling you…it’s so delicious.
I’ll be honest, I’m always a little iffy when it comes to meat replacements. They can often have a long ingredient list, full of things I can’t even pronounce. The Field Roast sausages are made with REAL ingredients like vegetables and spices, and I truly love the taste and texture they have.
Here’s how I made this simple Grilled Sausage & Vegetable Rigatoni, which is the perfect side for your next barbeque.
Grilled {Grain Meat} Sausage & Vegetable Rigatoni
Ingredients:
- 3 links Field Roast Italian sausage
- 1 box rigatoni pasta (I used chickpea pasta, which is naturally gluten-free and high in protein)
- 1 red bell pepper, diced
- 1 green zucchini, sliced
- 1 yellow squash, sliced
- 2 tbsp canola oil
- 2 tbsp quality olive oil
- salt & pepper (to taste)
- 1/2 cup goat cheese (optional)
Directions:
- Boil rigatoni pasta according to box instructions. Drain and set aside.
- In a large bowl toss the vegetables, canola oil, salt & pepper. Cook in a grill basket on the grill for 4-5 minutes, or until starting to brown/crisp up on the outside.
- Cook the sausages on the grill until crisp & brown on the outside, about 2-3 minutes per side. Remove and let cool, then slice into 1/4 inch pieces.
- In large bowl, combine the pasta, cooked vegetables and Field Roast sausage. Drizzle with olive oil and salt/pepper as needed. Top with fresh goat cheese crumbles.
This recipe could easily be made indoors too, with either an indoor grill or cooking the Field Roast sausage on the stovetop. It can also be served warm or at room temperature!
