As you can probably tell, these are a unique twist on everyone’s favorite Rice Krispie Treats. It’s pretty much the same recipe, just swapping in popcorn instead. They’re also totally customizable for any occasion. Some variation ideas are below!

Ingredients
- 2 tablespoons unsalted butter
- 1 10 ounce bag mini marshmallows
- 10 cups popcorn
- 1/3 cup sprinkles
- 1/2 cup white chocolate chips
Instructions
- In a large pot melt butter and marshmallows on medium heat, whisking frequently
- Once completely melted, turn off heat and mix in popcorn and sprinkled until fully combined
- Transfer mixture to a parchment-lined 9×13 cake pan
- In a small pot heat the white chocolate chips, whisking entire time, until melted
- Drizzle white chocolate over popcorn treats
- Let sit for at least 20 minutes before cutting into squares

What popcorn should I use in these Marshmallow Popcorn Treats?
For these Valentine’s Day Marshmallow Popcorn Treats I kept them extra festive by using Lesser Evil’s organic limited edition Sweetheart Pop. It has a subtle sweetness to it and the cutest pops of pink popcorn mixed in.
Also, any of your favorite bagged or homemade popcorn would work! In this case, I’d recommend a plain, lightly salted, or kettle corn would work best.
What sprinkles should I use?
So, you can use different colors of sprinkles to make these treats for any occasion – funfetti sprinkles for birthdays, Christmas colors, etc. For a “cleaner” sprinkle option I love these Nature’s Colors Sprinkles made with natural coloring.
Other variation ideas:
- You can mix chocolate chips or m&m candies into the treats
- Use milk or dark chocolate drizzle instead of white chocolate
- Mix in crushed Reese’s Pieces or Reese’s peanut butter cups for a PB version
- Instead of drizzling chocolate on top, you could dip half of each bar in chocolate
