I don’t know when exactly Friendsgiving became such a thing, but I’m oh-so glad it did. I mean, who doesn’t love an excuse to eat, drink, and throw an extra holiday celebration with friends?
If you’re anything like me and my friends, though, you’ve probably got quite the busy schedules. Millennial problems, I suppose. But when it comes to Friendsgiving, it’s always nice to show up with something homemade…or at least semi-homemade.
Enter: this Loaded Thanksgiving Bake. It includes just about all of your favorite Thanksgiving dishes into one warm, cozy & flavorful casserole. And the best part? There’s not a ton of cooking required, but your friends don’t have to know that 😉
To make this Loaded Thanksgiving Bake, you’ll want to get started by heading straight for the Whole Foods Market 365 in Fort Greene Brooklyn. It has become my go-to over the past few months because it’s always an enjoyable experience and they’re always fully stocked with quality products I feel good using when I’m cooking/baking for social gatherings.
I love that the 365 line of products are all fresh & wholesome without any artificial preservatives, colors, flavors, sweeteners, and hydrogenated fats. They have thousands of organic and non-GMO products, tons of gluten-free and vegan options. Not only does 365 have a lower price point (while still maintaining the same standards and quality as Whole Foods Market), but now there are even more deals and savings for Amazon Prime members during your in-store shopping experience.
I was in and out of the Fort Greene store after just about 20 minutes with all the ingredients in hand to make this casserole AND a dessert (more on that below). But first, here’s how to make this All-In-One Thanksgiving Bake.
Loaded Thanksgiving Bake
Ingredients:
- 4 cups 365 multigrain stuffing mix
- 2 cups cooked chicken or turkey *
- 1 medium sweet potato, diced
- 1 cup fuji apple, diced
- 2 cups fresh green beans, cut into 1 inch pieces
- 1 clove garlic, minced
- 1/4 cup dried cranberries
- 1/4 cup crushed pecans
- 1 container (11oz) 365 cream of mushroom condensed soup
- 1 cup 365 vegetable stock
- 2 tbsp canola oil
- 1 tbsp kosher salt
- 1 tsp dried parsley
- fresh cracked black pepper, to taste

Directions:
- Preheat oven to 350 degrees. Grease a large casserole dish.
- In a large stovetop pan cook the sweet potato, green beans, garlic, and apple in oil seasoned with salt, parsley & pepper on medium/medium high heat for 8-10 minutes, or until the sweet potatoes become soft. Set aside to cool.
- In a large mixing bowl combine stuffing mix, chicken or turkey, cranberries & pecans. Add in the cooled vegetable mixture.
- Add mushroom soup and vegetable stock and combine well.
- Transfer to casserole dish and bake for 30-35 minutes or until warm in the center.
{Vegan} Apple Crumb Pie à la Mode
If you want to keep your Friendsgiving contribution even more simple, go ahead and claim dessert and bring the fixings to make the most decadent VEGAN apple crumb pie a la mode. At Whole Foods Market 365 all you’ve got to grab is:
- pre-made Vegan apple pie
- a pint of 365 dairy-free ice cream (I LOVE the Salted Pecan Bourbon)
- crushed pecans
Your friends will be so into this dessert they won’t even stop to think you didn’t lift a finger to make it. But you’ll definitely want to lift a finger to dig into it, just saying.
