Sometimes those recipes come along that seem almost too good to be true, and this Peanut Butter Frosting is exactly that. It is so incredibly simple with just 2 ingredients. Plus, it is versatile, suitable for most dietary restrictions, and most importantly….so. Darn. Delicious.

Ingredients
- 1 can coconut cream
- 1/4 cup powdered peanut butter
Instructions
- Refrigerate coconut cream for at least a few hours, ideally overnight
- Scoop coconut cream out (not the liquid) into a large bowl
- Using a hand mixer beat the coconut cream until smooth and fluffy
- Add the powdered peanut butter and continue to mix until completely combined
- Refrigerate for at least an hour for frosting to thicken

This frosting is low-carb/keto friendly, dairy-free, vegan, gluten-free, low in sugar and a decent source of protein*. But when you taste it, trust me you would have NO idea.

Some notes in the ingredients used:
- I highly recommend using Thai Kitchen coconut cream for this recipe. If you can’t find that, then you can also use full fat coconut milk. However, some brands do not thicken as well as coconut cream does. Now, DO NOT use light coconut milk, because it will not harden the way that full fat or coconut cream does.
- In this case, any powdered peanut butter would work, but I love using PB Fit because it is a good source of protein.
- If you like your frosting sweeter, then you can add sugar, powdered sugar, stevia or monkfruit sweetener.
How to enjoy this Keto Peanut Butter Frosting:
- On a cake or cupcakes
- To make cookie sandwiches
- As a dip for fruit, pretzels, graham crackers
- On top of waffles or pancakes
- Top with chocolate and eat it straight with a spoon!
