Is it just me or are biscuits a part of the bread family that don’t get nearly as much love as they deserve?? They’re fluffy, pillowy, versatile, and quite cute. Even the word “biscuit,” is pretty adorable. Now, admit it. If I haven’t convinced you, then I think these Keto Garlic Herb Biscuits just might.
Keto Garlic Herb Biscuits
Ingredients:
- 2 cups superfine almond flour (I use Bob’s Red Mill)
- 2 tsp baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried chives
- 1/2 teaspoon dried parsley
- 1/4 teaspoon black pepper
- 1/3 cup butter, melted*
- 2 eggs, beaten
Directions:
- Preheat oven to 350 degrees and then line a large baking sheet with parchment paper.
- In a large bowl combine the almond flour, baking powder, salt & herbs
- In a separate bowl whisk together the butter and eggs, and then add to dry ingredients
- Combine dough well, then form into 8 biscuits and place on baking sheet
- Bake for 13-15 minutes. Transfer to a cooling rack to cool for at least 10 minutes
*If you want to make these Paleo, then you could use melted coconut oil or ghee instead.
I didn’t intend to make these biscuits keto-friendly, but here we are! Also, they’re gluten-free, grain-free, soy-free, and the options above to make dairy-free.
So, I just love baking with almond flour – it lends to such a delicious unique flavor but also a great soft-yet-hearty texture.
You could also make different variations of these biscuits. Additionally, you can use any other herbs you like, or leave out the garlic/herbs and you’ve got a pretty standard biscuit recipe on your hands that can be topped with jam or even make a shortcake dessert.
In addition, these Keto Garlic Herb Biscuits are great on their own or with a smear of butter, mashed avocado, or a bomb.com breakfast sandwich.
