The rich and creamy chocolate swirled with those mini marshmallows and (if you know what’s good) a hefty topping of whipped cream — perfection! Now, what if you could get those flavors into one delicious, decadent bite? This recipe for Hot Cocoa Cookies does just that. Plus, it’s a cookie everyone will love. And it can be enjoyed long past the winter season… why put a seasonal limit on pure joy, right?!
As I mentioned, I believe that there’s nothing more nostalgic and comforting than sipping a mug of hot cocoa by the fireplace during the holidays. Well…until now. Taking one bite of this cookie will have you transported to your favorite holiday memories. And, probably, instantly reaching for another cookie. Yes, they are *that* good!
Undoubtedly, Hot Cocoa Cookies are the ultimate holiday cookie. They’re so rich and decadent, full of the chocolate-y goodness of hot cocoa, but in cookie form. Plus, they have an ooey gooey melted marshmallow topping!

Ingredients
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 teaspoon hot water
- 1/4 teaspoon salt
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon cinnamon
- 1 cup semisweet chocolate chips
- 10–11 large marshmallows, cut in half
- shaved chocolate for topping
Instructions
- Preheat oven to 350 degrees and line baking sheets with parchment paper
- Using a stand mixer or a hand mixer cream butter, white sugar and brown sugar.
- Beat in the egg and vanilla extract
- In a small cup combine hot water & baking soda until it dissolves completely, then beat into wet mixture
- In a separate bowl combine flour, cocoa powder, salt and cinnamon
- Beat dry ingredients into wet ingredients 1/2 cup at a time
- Stir in chocolate chips
- Refrigerate dough for at least 15 minutes
- Form into 20-22 balls and place on baking sheet at least 2 inches apart
- Bake for 8 minutes. Press halved marshmallow onto top of each cookie, and bake for another 2-3 minutes until slightly melted
- Transfer to a cooling rack and finish with a sprinkle of shaved chocolate

Can I make these Hot Cocoa cookies gluten-free?
Of course, yes! To do so, simply sub in a 1:1 gluten-free flour. Generally, my favorites are Pillsbury and Bob’s Red Mill.
Can I use mini marshmallows?
Of course, mini marshmallows will work just as well. In that case, follow the same instructions, but top with 2-3 mini marshmallows instead of 1/2 a large one.
