Happy Memorial Day! Since it’s the (unofficial) start of summer, here’s a recipe you’re going to want to hold onto all season long. It’s the perfect summer barbecue side dish and a way to get even the pickiest eaters to enjoy vegetables. Now, here’s how to make this Honey BBQ Cauliflower.
Honey BBQ Cauliflower
Ingredients:
- 1 head of cauliflower, cut into small florets
- 3/4 cup flour (I used Bob’s Red Mill 1:1 gluten-free flour)
- 1 tsp paprika
- 2 tsp garlic powder
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup milk of choice
- 1/4 cup bbq sauce
- 2 tbsp melted coconut oil
- 2 tbsp honey
Directions:
- Preheat oven to 450 degrees
- In large bowl combine the flour, paprika, garlic powder, salt and pepper, then mix in milk to form batter
- Toss cauliflower in the batter and spread evenly on a large greased baking sheet
- Bake for 20 minutes
- Whisk together bbq sauce, coconut oil and honey
- Toss sauce all over the cauliflower and bake for another 20 minutes
Some notes on this recipe:
- You can easily make gluten-free by using your favorite gluten-free all purpose baking powder. I always love using Bob’s Red Mill 1:1 flour. I can’t speak to coconut or almond flour because I’ve never tried it, and those tend to differ in measurements needed
- I’ve made this same recipe using buffalo sauce instead of bbq sauce, and it’s a delicious variation!
- If you don’t have coconut oil, you can use any vegetable oil instead
- If it doesn’t turn out crispy enough for your liking, bake under the broiler for 5 minutes or so
