Everyone is going to love these Homemade Funfetti Cupcakes. They are super fluffy and filled with amazing colors. Plus that frosting… decadent. The perfect celebration dessert! Keep scrolling for the recipe.
So, I celebrated my birthday yesterday under a home-quarantine. But before you go feeling sorry for me, just…don’t. Actually, I had the incredible company of 12 Homemade Funfetti Cupcakes.
Now I love a good boxed funfetti mix (probably more than the next girl), but there’s really something to be said for a baked good that is made entirely from scratch. Real flour, real sugar, real butter. Not to mention I just straight up didn’t have a boxed cake mix and wasn’t about to traverse out of my safe lil home-quarantine to get it.
Homemade Funfetti Cupcakes
(yields 12 cupcakes)
Cupcake ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup unsalted butter, softened to room temperature
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/3 cup milk
- 1/2 cup rainbow sprinkles
Frosting ingredients:
- 1/2 cup unsalted butter, softened to room temperature
- 1 1/2 cups powdered sugar
- 1-2 tablespoons milk
- 1 teaspoon vanilla extract
Cupcake Directions:
Preheat oven to 350 degrees. Line a 12-muffin pan with cupcake liners & spray with nonstick spray
Combine flour and baking powder in a bowl. Set aside
Using a hand mixer, in a large bowl cream butter and sugar. Then beat in the eggs and vanilla extract
Add flour mixture to creamed mixture 1/2 at a time and combine well, then lastly mix in the milk
Fold in rainbow sprinkles. Pour batter into cupcake liners 2/3 of the way full
Bake for 20 minutes and let cool for 30 minutes before frosting
Frosting Directions:
To make the frosting, using a hand mixer cream the butter for about a minute, then beat in the powdered sugar 1/3 at a time. Lastly beat in the milk and vanilla extract until reaches a smooth consistency
Spread approx 2 tablespoons of frosting on each cupcake and top with more sprinkles
These Homemade Funfetti Cupcakes are the perfect go-to recipe for just about…well, anything. But especially for celebrations. Birthdays, graduations, new jobs, not contracting Covid-19…

This recipe yields 12 cupcakes but can easily be doubled/tripled. And by easily I mean, nothing a calculator can’t handle.
