This Healthy Strawberry Shortcake Bowl is SO satisfying. Plus, it’s super easy to make. In fact, I think it could be either a breakfast or a dessert! Or dessert for breakfast because why not! It’s made with Greek yogurt. In addition, it’s high in protein, low in carbs, gluten-free and grain-free. Really, she does it all!

Ingredients
* 6oz plain Greek yogurt
* 1/2 teaspoon vanilla extract
* sweetener of choice (I used a sprinkle of monk fruit sweetener)
* 1/2 cup fresh strawberries, quartered
* handful of HighKey Vanilla Shortbread Cookies
* slivered almonds
* drizzle of honey
Instructions
1. In a small bowl mix together yogurt, vanilla & sweetener
2. Top with strawberries, cookies, almonds & honey

What kind of yogurt should I use?
In this case, I used plain, 2% FAGE Greek yogurt. However, if you don’t want to flavor/sweeten your yogurt you can omit the vanilla extract and sweetener, or you can opt for a vanilla flavored yogurt.
You can also use any yogurt you like, but I always go for Greek yogurt because it has high protein content.
Where do I find the Keto cookies?
The cookies I used are HighKey Vanilla Shortbread Cookies. They are Keto-friendly, gluten-free, grain-free, and SO delicious! I love them in every variety, but this vanilla wafer is perfect in this recipe.
Other variations:
- Instead of the cookies you could use your favorite cereal or granola
- Any other berries or fruit would be a delicious addition!
- Add a spoonful of nut butter or sprinkle of hemp seeds for more healthy fats
