Making healthier versions of baked goods is always a tricky thing, and an assignment I don’t take lightly. I’m not someone who is easily fooled into liking something just because it’s healthier if in reality I’d rather be eating the real thing. So I hope you’ll trust me when I say I really, truly love these Low Sugar, Gluten-Free Healthy Chocolate Chip Cookies.

Ingredients
- 2 cups + 2 tbsp almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter OR coconut oil, melted
- 1/2 cup monk fruit sweetener
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup sugar-free dairy-free chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper
- In a large bowl mix together the almond flour, baking powder and salt
- In a separate bowl whisk together butter, monk fruit sweetener, vanilla and egg
- Add wet ingredients to dry ingredients, then fold in chocolate chips and walnuts
- Chill dough for 10 minutes in the refrigerator
- Form dough in 12-15 balls and press down into discs
- Bake for 10-12 minutes and transfer to cooling rack

Store these in an air-tight container for up to 5 days, or longer in the fridge/freezer. I personally prefer the texture of these when refrigerated!

These Vegan + Keto Chocolate Chip Cookies are of course delicious straight out of the oven, but I found they get an even better texture after they’ve cooled. They are firm yet soft and the perfect amount of sweetness.
And when I say these are healthier, I mean it. These babies are grain-free, gluten-free, dairy-free, soy-free, and nearly sugar-free! LIKE, WUT.
What almond flour should I use?
A fine almond flour from blanched almonds works best. Bob’s Red Mill is a favorite of mine.
Can I use another type of flour?
I have not tried this recipe with another flour. All-purpose or oat flour may work. I would strongly advise against using coconut flour, as it has a very different absorbancy and would require all different measurements/ingredients.
What monk fruit sweetener should I use?
My favorites are Whole Earth and Monk Fruit In The Raw.
Can I use another sweetener?
The same amount of regular granulated sugar, coconut sugar or maple syrup should work just fine (however I have not tried those yet!).
Where can I find low sugar chocolate chips?
Some of my favorites are Bake Believe, Lily’s, and Hu baking chips (code GRACIE for free shipping).
How do I store these cookies?
