Happy Tummy Salad
In a salad bowl toss together:
- 1 cup mixed greens
- 1/2 of a cucumber, sliced
- 4 oz tempeh, thinly sliced and pan-fried (I always follow this method)
- 2 tbsp crushed & toasted almonds
- 1/2 cup roasted sweet potato
- 2-3 tablespoons of Creamy Greek Yogurt Dressing *
- fresh parsley or dill for topping
* I’ve made this salad dressing a couple of times and absolutely love it! I usually 1/2 the recipe and use apple cider vinegar (instead of rice vinegar) for that extra kick of gut health goodness.
