Gluten-Free Peanut Butter and Jelly Cookie Bars

Imagine making your favorite childhood sandwich a dessert, and you’ve got my Gluten-Free Peanut Butter and Jelly Cookie Bars. These are nostalgia in one sweet bite. 

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups 1:1 gluten-free flour
  • 1/2 cup gluten-free quick cooking oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberry jam
  • 1/3 cup peanuts, chopped

Instructions

  1. Preheat oven to 350 degrees. Grease an 8×8 baking dish, or line with parchment paper
  2. Using a stand mixer or hand mixer, cream butter and sugars for 2 minutes
  3. Then beat in peanut butter, egg and vanilla until fully combined
  4. In a separate bowl combine flour, quick oats, baking powder and salt
  5. Stir flour mixture into peanut butter mixture just until combined
  6. Spread 2/3 of the dough into baking dish, pressing down to make an even surface
  7. Spread jam evenly over the dough, then top jam with globs of the remaining dough, and lastly an even sprinkle of peanuts
  8. Bake for 24-26 minutes until top just turns golden brown. Allow to cool for at least an hour before cutting into squares
