Easter baking = extra cute baking…it’s a fact. How adorable are these Gluten-Free Easter Cupcakes?!
I’ve been on a cupcake kick lately, and these are the perfect classic vanilla cupcakes with buttercream frosting. I made them gluten-free with Bob’s Red Mill 1-1 Baking Flour ~ it’s great for swapping into recipes where you’d normally use all-purpose flour, no adjustments necessary. Then I used almond extract as a lil secret ingredient, which added a subtle yet delicious flavor to the cupcakes. Here’s how to make them!
Gluten-Free Easter Cupcakes
yields 10-12 cupcakes
Cupcake ingredients
- 1 1/3 cup Bobs Red Mill 1-to-1 Baking Flour
- 1 1/2 tsp baking powder
- pinch of salt
- 1/4 cup unsalted butter, softened to room temp
- 2/3 cup granulated sugar
- 1 egg
- 1 tsp almond extract
- 1/2 cup milk
Frosting ingredients
- 1/4 cup unsalted butter, softened to room temp
- 1 1/2 cup powdered sugar
- splash of milk – only if needed to help combine
- sprinkle of pitaya powder to make pink! (optional)
Directions:
- Preheat oven to 350 degrees and line muffin pan with baking cups
- In a bowl combine flour, baking powder & salt
- In a separate large bowl cream the butter and sugar, then add egg and vanilla extract
- Add dry ingredients to wet ingredients and combine well with a hand mixer, then beat in the milk
- Fill baking cups halfway with cupcake batter. Bake for 17-18 minutes and let cool for at least 30 minutes before frosting
- To make the frosting cream the butter with a hand mixer, then beat in the powdered sugar 1/2 at a time. Lastly beat in the pitaya powder, if using
- Frost the cupcakes and top with your favorite Easter/floral sprinkles
These cupcakes are all cutesy here for Easter, but they’re really an all-around great recipe to keep on hand for just about any occasion or variation. You could add sprinkles to make them funfetti, add chocolate chips, or use a different (chocolate!) frosting.
