If you’ve been following me for a while, then you know I love my cookie sandwiches. So far I have made:

There’s just something about these treats that hit the spot every. single. time! In truth, you could call these either cookie sandwiches OR whoopie pies. How is that? Well, because the cookie part is light and fluffy — kind of like the cake part of a whoopie pie. And like any good good whoopie pie (or cookie sandwich!) they’re stuffed full with decadent frosting.
Carrot cake can be enjoyed all year round, but these are *particularly* tasty around Easter time. There’s nothing like a good piece of carrot cake on Easter, and these Carrot Cake Whoopie Pies are basically a slice of a cake in a bite. The decadent cream cheese filling really takes them to the next level (it might even be the best part!). No one would ever believe that they’re gluten- and grain-free as well as low in added sugar!

Ingredients
Cookie Ingredients
- 2 cups fine almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 egg
- 1/4 cup maple syrup
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/3 cup grated carrots
- 1/4 cup finely chopped walnuts
Filling Ingredients
- 4 oz cream cheese, softened to room temperature
- 2 tablespoons unsalted butter, softened to room temperature
- 3/4 cup confectioners sugar
Instructions
To make cookies:
- Preheat oven to 350 degrees. Line baking sheets with parchment paper
- In a bowl combine the dry ingredients – almond flour, baking soda, cinnamon & nutmeg
- In a separate bowl whisk together egg, maple syrup, butter & vanilla extract
- Add wet ingredients to dry ingredients and combine well, then fold in the grated carrots and chopped walnuts
- Refrigerate dough for 30 minutes (so it’s easier to work with – dough will still be on the stickier side!)
- Roll dough into 16 balls and flatten slightly. Place on baking sheet
- Bake for 10-11 minutes. Transfer to cooling rack and let cool completely
To make frosting filling:
- Use a hand mixer to beat the cream cheese and butter until fully combined
- Add powdered sugar 1/4 cup at a time, and continue beating until smooth and creamy
To assemble cookie sandwiches:
- Spread 1-2 tablespoons filling on a cooled cookie, then top with another cookie
- Enjoy immediately and keep stored in the refrigerator

You can easily double or triple this recipe! The cookies are very rich, so unless making for a larger group you may not need as many as you think (;

Ingredients and Substitutions for Carrot Cake Cookie Sandwiches
What kind of almond flour should I use?
When making this recipe, be sure to use finely ground almond flour (not almond meal) as it lends to the soft and chewy texture you want in these cookies. In this case, I used my favorite brand of almond flour, Bob’s Red Mill.
However, I have not tried this recipe using another type of flour. But I think that regular all-purpose flour, whole wheat flour or oat flour should work. Though, I *do not* recommend using coconut flour as it has a very different absorption.
Other ingredient substitutions:
- If you don’t want to use maple syrup, then you can use honey regular sugar, or monk fruit sweetener.
- Instead of butter, you can use coconut oil.
- If you want to skip making your own filling, then you can use your favorite store-bought frosting. In that case, I would recommend my two favorites: Miss Jones and Simple Mills.
