One of my all-time favorite dessert recipes is my Double Topping Apple Crisp, but I didn’t want to wait until the fall to enjoy it. So I made this summer twist that has all the goodness of the buttery, crumbly crisp topping but instead paired with the sweet burst of mixed berries. The summer season is the ideal time to whip up this treat because you can get the berries fresh, and the taste will be unmatched. However, frozen berries (or pretty much any fruit you want!) will work in this recipe. It’s incredibly versatile!
Berry Crisp is perfect to celebrate summer holidays like Memorial Day and Fourth of July (the colors even match!). It’s so easy to make (you really can’t mess it up) and everyone will absolutely love it. In fact, all you need is a few simple ingredients and less than one hour for it all to come together.

Ingredients
- 1 pound fresh strawberries, cut into quarters
- 11 ounces fresh blueberries
- 3 teaspoons granulated sugar
- 1 1/2 tablespoons cornstarch
- 1/2 cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1 cup regular or quick oats*
- pinch of salt
- vanilla ice cream or whipped cream for topping
Instructions
- Preheat oven to 375 degrees
- Place berries in an 8×8 baking dish. Add granulated sugar and cornstarch and toss so the berries are evenly coated
- In a large bowl, whisk together melted butter, brown sugar and vanilla. Then add in the flour, remaining cinnamon, salt and oats. Combine well
- Spread topping on the apples and bake for 30-35 minutes, until top is golden brown

Can I use other berries or fruit in this recipe?
Of course. You could use peaches, apples, cherries, rhubarb, pears, plums — the world is your fruit oyster!
Can I use another type of flour?
I used Bob’s Red Mill almond flour in this recipe and it added to a delicious flavor and texture while keeping this recipe gluten-free. If you don’t want to use almond flour, you could instead use all-purpose flour, whole wheat flour, oat flour or a gluten-free flour would work.
Can this be made dairy-free?
Yes just use a dairy-free/plant-based butter. My favorite are Country Crock and Earth Balance. If serving with ice cream or whipped topping, use your favorite dairy-free versions.
How should I store this berry crisp?
Store at room temperature for about 3 days, or in the refrigerator for longer.
How should I serve this berry crisp?
This is amazing served warm (with a scoop of ice cream and a dollop of whipped cream, of course!). If you’re bringing this to a gathering and can’t serve it out of the oven, don’t worry. You can also serve this room temperature or reheat it in the oven or microwave.
