Gluten Free Frosted Funfetti Sugar Cookie Bars

Deliciously gluten-free sugar cookie bars with a simple dairy-free frosting and rainbow sprinkles.

Cookie Bars:

  • 1/2 cup unsalted dairy-free butter, melted
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract or vanilla paste
  • 1 3/4 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup rainbow sprinkles

Frosting:

  • 1/2 cup unsalted dairy-free butter, softened to room temperature
  • 1 3/4 cups powdered sugar
  • 12 tablespoons nondairy milk, if needed
  • 3 tablespoons rainbow sprinkles

Instructions

  1. Preheat oven to 325 degrees and line an 8×8 baking dish with parchment paper
  2. In a large bowl, using a stand mixer or hand mixer cream the butter and sugar
  3. Beat in the egg and vanilla extract
  4. In a separate bowl combine almond flour, baking powder and salt
  5. Add dry ingredients to wet ingredients and combine well, then mix in sprinkles
  6. Transfer to baking dish and bake for 33-35 minutes. Allow to cool for at least an hour
  7. To make the frosting, cream butter in a large bowl until soft and fluffy
  8. Beat in the powdered sugar 1/2 cup at a time until all combined, adding milk if needed to bring together
  9. When the cookie bars have cooled completely, spread on a layer of the frosting, then sprinkles. Cut into 12-16 squares
