It’s no secret that I LOVE making cookies. But, sometimes even this Hungry Blonde doesn’t feel like going through the whole process of rolling dough, forming cookies, transferring cookies to a cooling rack…that’s some serious hard work, people 😉
I kid, I kid. Kind of. Either way, these Frosted Funfetti Sugar Cookie Bars solve that problem, and they also happen to be ridiculously delicious too. The sugar cookie bar base is soft yet dense, and the fluffy frosting is easy to make with just 2-3 ingredients.
Oh and, who doesn’t love funfetti??

Ingredients
Cookie Bars:
- 1/2 cup unsalted dairy-free butter, melted
- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract or vanilla paste
- 1 3/4 cups almond flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 cup rainbow sprinkles
Frosting:
- 1/2 cup unsalted dairy-free butter, softened to room temperature
- 1 3/4 cups powdered sugar
- 1–2 tablespoons nondairy milk, if needed
- 3 tablespoons rainbow sprinkles
Instructions
- Preheat oven to 325 degrees and line an 8×8 baking dish with parchment paper
- In a large bowl, using a stand mixer or hand mixer cream the butter and sugar
- Beat in the egg and vanilla extract
- In a separate bowl combine almond flour, baking powder and salt
- Add dry ingredients to wet ingredients and combine well, then mix in sprinkles
- Transfer to baking dish and bake for 33-35 minutes. Allow to cool for at least an hour
- To make the frosting, cream butter in a large bowl until soft and fluffy
- Beat in the powdered sugar 1/2 cup at a time until all combined, adding milk if needed to bring together
- When the cookie bars have cooled completely, spread on a layer of the frosting, then sprinkles. Cut into 12-16 squares

What flour should I use?
My favorite almond flour to use is Bob’s Red Mill super-fine almond flour. But any almond flour (not almond meal) should work.
I would not recommend using coconut flour as it absorbs moisture very differently than other flours.
I have not tried this recipe with any other flours, but all-purpose flour or gluten-free flour should work. Keep an eye on it, though, because it might cut down on baking time.
What sprinkles should I use?
I love using India Tree Nature’s Colors sprinkles because they are made with vegetable colorants and no artificial dyes.
You could also omit the sprinkles for a classic frosted sugar cookie bar, or even swap in chocolate chips!
Can these be made vegan?
I have not tried this, but making a “flax egg” is a vegan replacement for using egg.
Any other ingredient alternatives?
- To make lower in sugar you can use monkfruit sweetener instead of sugar
- If you are not dairy-free, you can use regular butter
- If you want to skip making your own frosting, some of my favorites are Simple Mills or Miss Jones
How should I store the cookie bars?
I prefer to store these in the refrigerator (for up to a week) because they hold texture better and don’t get soggy. Otherwise store in an airtight container for up to 5 days.
