I used to think there was nothing better than a bowl of crunchy cereal with milk… until I baked that into cookie form. Fruity Pebbles Sugar Cookies have pretty much made all of my childhood dreams come true. Plus, they’re gluten-free! Keep scrolling for this recipe.
Fruity Pebbles Sugar Cookies Recipe:
Ingredients:
- 2 cups Bob’s Red Mill super fine almond flour
- 1/4 cup coconut flour
- 1 1/2 tsp baking soda
- pinch of salt
- 2 eggs
- 1/2 cup butter, melted
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup Fruity Pebbles cereal
- 1/2 cup white chocolate chips
Directions:
- Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper
- In a bowl combine almond flour, coconut flour, baking soda & salt
- In a separate large bowl combine eggs, butter, sugar & vanilla
- Add dry ingredients to wet ingredients and combine well, then lastly mix in the cereal and white chocolate chips
- Refrigerate dough for 10-15 minutes
- Form dough into 2 or 3 inch balls, place on baking sheet and flatten a bit
- Bake for 8-10 minutes and transfer to cooling rack
- I recommend storing these in the refrigerator as they can get soggy after a day or so
Some substitutions notes:
- I wouldn’t suggest changing flour amounts as coconut flour and almond flour tend to work with other ingredients very differently
- swap in your favorite vegan/dairy-free butter. You could also use coconut oil, however I think the flavor of butter is best in these cookies
- to lower the sugar you could use monk fruit sweetener. I wouldn’t suggest honey or maple syrup for this recipe, however if you try it let me know!
- any other cereal would work in these
Please be warned – these Fruity Pebbles Sugar Cookies are kinda sorta addicting. If you couldn’t tell, the “milk” in the cookies is from the white chocolate chips, but dunking these babies in milk (especially while they’re still warm) is the move of all moves.
I like making these cookies a bit on the larger side, but you could make them smaller and get more cookies out of this batch. This recipe is also easy to double if making for a party/large group!
