If you’re not familiar with Dump Cakes, allow me to let you in on the *easiest* semi-homemade dessert that tastes like you slaved away in the kitchen all day long making it! Dump cakes usually include just a few ingredients: a fruit filling layer, cake mix layer, and butter layer. That’s it!
However, most dump cake recipes use sugar-filled fruit filling and cake mixes with questionable ingredients. While we’re all about balance here at HB, if there are easy swaps that can make a dish just a little healthier, then why not give it a try?!
Instead of funky ingredients, this Easy Fresh Peach Dump Cake uses fresh peaches, a grain-free cake mix made with cleaner ingredients, and a dairy-free, coconut milk based whipped topping.
Even though this recipe is made with better-for-you ingredients, it does not taste that way! In fact, this recipe results in the same sweet, syrupy cake as other recipes that use heavier ingredients. And the fresh peaches here make this dish feel like the epitome of a summertime dessert.

Ingredients
- 4–5 fresh peaches, peeled and diced (about 4 cups) *
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 box Simple Mills vanilla cake mix
- 1/2 cup (1 stick) cold (regular or vegan) butter, cut into thin slices
- 1 tub dairy-free whipped topping
- chopped walnuts for topping (optional)
Instructions
- Preheat oven to 350 degrees
- Toss diced peaches with sugar and water, then add to the bottom of a 9×13 cake pan
- Sprinkle cake mix evenly on top of the peaches (do not mix!), then place butter slices evenly across cake mix
- Bake for 35-40 minutes, until edges are bubbling and top is golden brown
- Allow to cool completely before serving topped with a dollop of whipped topping and walnuts
Notes
* peeling isn’t necessary as the peaches will still get soft enough. I personally prefer to leave skin on for the vibrant color!

Preparing the Peaches for Fresh Peach Dump Cake
Why add sugar and water to the peaches? This allows the peaches to develop a natural “syrup,” which gives the flavor and texture you want in this cake!
Can I use canned peaches instead of fresh? Yes, in that case omit the extra water and sugar. I recommend opting for organic canned peaches if possible. You can peel the peaches if you like, although it isn’t necessary as the peaches will still get soft enough. I personally prefer to leave skin on for the vibrant color!
Other Ingredients and Substitutions
Why use Simple Mills cake mix? I love using this cake mix because it is made with minimal ingredients, is dairy-free, grain-free, gluten-free and vegan! However, any yellow or white cake mix will work fine in this recipe.
Can I use a vegan butter? Yes! In fact, that simple swap makes this cake entirely vegan!
Can I use a different whipped topping? Yes, you can use any of your favorite whipped topping, whipped cream, or homemade whipped cream.
One of the best ways to enjoy this cake is right out of the oven, with a hefty scoop of vanilla ice cream! It’s simply delicious.
